No-added-sugar fruit cake recipe (Yummy on the Inside): Yummy on the inside and appealing on the outside. The cake will give you instant energy due to the fruits present in it. Great to be taken with tea.
Ingredients: 1 orange, 250g prunes, quartered, 500g dried mixed fruit, 2tsp ground mixed spice, 4 eggs, 225g butter, 2 tbsp milk, 300g plain flour, and 1tsp baking powder.
Cooking Method: Preheat the oven at 160C and grease the baking pan. Take out the oranges zest and orange juice. Take a measuring cup and pour the orange juice and 200 ml water in it. Pour the mixture in a saucepan and add the grated zest, mixed dried fruits, spice, and prunes in it. Lower the heat, keep stirring and simmer for 2-4 minutes until the liquid is absorbed. Put the mixture away from heat and let it cool for 30 minutes.
Whisk the eggs, milk, flour, butter, and baking powder in in a bowl. Stir the mixture with the dried fruit until the ingredients are combined. Cover the pan with an aluminum foil. Bake the batter in the center rack of the oven for 1 hour. Throw the foil away and bake until the cake is pale golden in color.
